Beer Roasted Chicken
Ingredients
1 whole chicken about 2-4 lbs
1 (355ml) can of beer
Poultry seasoning
Fresh rosemary
2-3 Cloves fresh garlic
Salt and pepper to taste
Directions
Preheat your outdoor grill on Medium heat.
Rub the outside of the skin with poultry seasoning, lightly covering the entire bird.
Grind fresh pepper & salt over bird, to desired taste.
Place 2-3 small cloves of garlic in beer can along with 2-3 sprigs of fresh rosemary.
Place the beer can on the stainless steel base then place the diffuser cone with diffuser plate over the beer can. Place the chicken on the assembled roaster and add vegetables, herbs and spices around the chicken. Pour in a liquid to steam the vegetables and add flavor and aroma such as more beer, water, or a fruit juice.
Place the roaster with the chicken on the grill, keeping lid closed. Cook the bird 18-20 min. per pound, or until the breast meat has reached an internal temperature of 170ºC.
As an alternative to beer, subtitute 4-6 ounces of white wine, directly to the base pan of the roaster along with the other ingredients listed in the recipe.
Try other combinations of flavour too! Citrus juices, other spices and herbs, or onion can add flavour to your poultry.
