Red Curry, Coconut, Peanut Dip

Ingredients

1 tsp olive oil

4 cloves garlic, finely minced

2 tsp red curry paste

1 ½ tbsp rice vinegar

1 tsp brown sugar

1 can coconut milk

1 tbsp soy sauce

3 tbsp peanut butter

juice of 2 lime

salt and pepper


Directions

Cook garlic and red curry paste in 1 teaspoon olive oil. Add rice vinegar, brown sugar, coconut milk and soy sauce. Bring to a simmer over low heat. Add peanut butter and whisk gently. Reduce over low heat until thick. Watch carefully, as this sauce burns easily. Add lime juice and salt and pepper
