Grilled Cinnamon Chips With Fruit Salsa
6 flour tortillas
1/2 cup sugar
1/4 cup cinnamon
1/4 cup vegetable oil, or melted butter
3 peaches, peeled and diced
1 cup raspberries
1 1/2 tbsp lime juice
1 tsp honey
1/4 tsp cinnamon
Preheat barbecue on MEDIUM. Brush tortillas with vegetable oil on both sides. Combine sugar and cinnamon into a small bowl. Sprinkle one side with sugar/cinnamon mixture and grill 2 minutes. Turn and sprinkle with more sugar/cinnamon mixture and grill 2 minutes more. Remove from grill, cut into bite size wedges and serve with fruit salsa.
Fruit Salsa: Clean and prepare fruit and toss into a large bowl with honey, lime juice and cinnamon. Serve garnished with lime slices and mint if desired.
