Provencal Marinade
Ingredients
This is an old stand-by in our home for chicken or pork. Vary the flavours with different herbs...rosemary alone is wonderful.
1/4 cup dijon mustard
2 cloves garlic, minced
2 tbsp balsamic vinegar
2 tbsp lemon juice
2 tbsp olive oil
1 tbsp herbes de provence*
salt and pepper to taste
Directions
*a blend of thyme, rosemary, lavender, and summer savory available in specialty food shops and some supermarkets.
Combine all of the ingredients in a glass dish suitable for marinating.
