This tangy, low fat marinade is also excellent for fish or pork.
4 chicken breast halves, skinned and boned
juice of one lemon
2 tsp olive oil
1 clove garlic
1/2 tsp dried oregano
Combine all the ingredients in a heavy-duty resealable Ziploc bag. Marinate at room temperature for 20 minutes, or in the refrigerator for up to 6 hours.
Preheat barbecue on HIGH. Place chicken on the grill, reduce heat to MEDIUM, and cook for 12 minutes, turning once halfway through cooking.
