Spicy Carrot Salad
Ingredients
Although this is not a grilling recipe, it goes so well with grilled meats, we had to include it. This is a great make-ahead party dish as it keeps well in the refrigerator for 1 - 2 days.
1 lemon, freshly squeezed
1 tbsp cider vinegar
2 cloves garlic, minced
1/4 tsp cayenne
1/2 tsp ground caraway seed
1/2 tsp ground cumin
sprig cilantro for garnish
1 tbsp olive oil
3 tbsp yogurt
1 lb grated carrots
dash salt
Directions
Combine the lemon juice, vinegar, garlic, cayenne, caraway and cumin in a small glass mixing bowl. Whisk in olive oil and yogurt, and season with salt. Pour over grated carrots and toss to coat. Garnish with sprigs of cilantro.
