Mikey's White Fish and Smokey Bacon Kabobs

Ingredients

Mike describes his dish as "dead simple but delicious"!


1 lb white fish fillets, cut into chunks

1/4 cup lemon juice

1 tsp paprika

8 strips bacon

Directions

Preheat barbecue on HIGH.

Combine lemon juice and paprika in a shallow glass dish. Add fish and toss to coat. Cut each strip of bacon in half, and wrap around the chunks of fish. Secure well on a skewer (the double pronged version work well).

Reduce the heat to MEDIUM - LOW. Place skewers on the barbecue and cook, turning as necessary, until the fish is cooked through.
