Grilled asparagus is a great side for a variety of summer dishes; try adding a little excitement to your generic grilled greenery? Including prosciutto and cream cheese in the mix can create a flavor trifecta and help you impress any guest with your cooking skills. Give it a try and judge for yourself!
1 lb. asparagus
1 pack of prosciutto (based on 10 slices per pack)
8oz cream cheese
2 Tbsp. olive oil
Salt and pepper to taste
Preheat barbecue to 400°F or 205°C
Place asparagus stocks on cutting board and remove the "woody" ends. The stock should be a solid green with no white end remaining. Do this before removing the rubber band! Place the asparagus in a shallow pan and lightly coat with olive oil. Sprinkle salt and freshly ground pepper to desired taste and set aside.
One piece at a time place prosciutto slices on a flat surface. For best result use a whipped cream cheese, it's easier to spread. Using a butter knife carefully apply a small amount of cream cheese to each slice of prosciutto. Place three stalks of asparagus on top of the prosciutto in the shape of a pyramid. Roll the prosciutto around the asparagus as tight as possible. Since the cream cheese acts as a glue there's no need to pin with a toothpick! Place wrapped asparagus on a grill topper and move to barbecue
Alternatively, if you do not own a grill topper, oil the cooking grids and place wrapped asparagus directly on the grilling surface. Grill for 6 to 8 minutes until prosciutto is crisp and the heads of asparagus are somewhat charred. Rotate or flip the asparagus every 2 minutes to achieve the best grill marks. The cream cheese should be running out slightly from the prosciutto. Remove grill topper, plate and enjoy!
