8 medium potatoes, Yukon Gold
2 small onions, sliced thinly
3 tbsp olive oil
salt and pepper, to taste
Preheat grill on MEDIUM for 5 minutes. Prepare potatoes by scrubbing to clean outside skin. Slice potatoes 10-12 times, 3/4 way through, leaving skin intact, to create a fan. Insert onion slices into spaces created in potatoes. Brush with olive oil and season with salt and pepper. Wrap individually in foil, place on grill and cook for 40 minutes.
