Mike describes his dish as "dead simple but delicious"!
- 1 lb white fish fillets, cut into chunks
- 1/4 cup lemon juice
- 1 tsp paprika
- 8 strips bacon
- Preheat barbecue on HIGH.
- Combine lemon juice and paprika in a shallow glass dish. Add fish and toss to coat. Cut each strip of bacon in half, and wrap around the chunks of fish. Secure well on a skewer (the double pronged version work well).
- Reduce the heat to MEDIUM - LOW. Place skewers on the barbecue and cook, turning as necessary, until the fish is cooked through.
