- 6 Flour tortillas
- 1/2 cup Sugar
- 1/4 cup Cinnamon
- 1/4 cup Vegetable oil, or melted butter
- 3 Peaches, peeled and diced
- 1 cup Raspberries
- 1 1/2 tbsp Lime juice
- 1 tsp Honey
- 1/4 tsp Cinnamon
- Preheat barbecue on MEDIUM. Brush tortillas with vegetable oil on both sides. Combine sugar and cinnamon into a small bowl. Sprinkle one side with sugar/cinnamon mixture and grill 2 minutes. Turn and sprinkle with more sugar/cinnamon mixture and grill 2 minutes more. Remove from grill, cut into bite size wedges and serve with fruit salsa.
- Fruit Salsa: Clean and prepare fruit and toss into a large bowl with honey, lime juice and cinnamon. Serve garnished with lime slices and mint if desired.
