Due to the intense flavour, only a short marinating time is necessary. This is perfect for a quick but elegant after work dinner.
- 1/2 cup jalapeño jelly
- 1/3 cup onion, finely chopped
- 2 tbsp line zest, grated
- 2 cloves garlic, minced
- 1/2 cup lime juice
- 1/4 cup olive oil
- 1/2 tsp ground cumin
- dash salt and pepper
- Dissolve the jalapeño jelly in a small sauce pan. Remove from heat. Combine the jelly, grated lime zest, lime juice, garlic, onion, and cumin in a blender or in the bowl of a food processor. With the motor running, drizzle in olive oil.
- Marinate chicken or pork for 1 hour before grilling.
