This tangy, low fat marinade is also excellent for fish or pork.
- 4 chicken breast halves, skinned and boned
- juice of one lemon
- 2 tsp olive oil
- 1 clove garlic
- 1/2 tsp dried oregano
- pinch cayenne
- Combine all the ingredients in a heavy-duty resealable Ziploc bag. Marinate at room temperature for 20 minutes, or in the refrigerator for up to 6 hours.
- Preheat barbecue on HIGH. Place chicken on the grill, reduce heat to MEDIUM, and cook for 12 minutes, turning once halfway through cooking.
